After the discussion on the p-p's I remembered the August New Zealand Gardener mag which had an article about these, they are called Urenika.
Cooking suggestions were pretty much as we talked about earlier, adding garlic , sour cream, herbs, etc, there was also an easy recipe for a sort of fritter... the potato is grated, excess moisture squeezed out, a heavy based frypan is heated (probably best done before you grate the potato) ,a small amount of oil is added then the gratings are dropped in spoonfuls to fry, sprinkle with coarse salt and serve hot. It might not give them any great taste though. There is another one for Pot Roasted potatoes, any variety will work.
Heat approx 3 tablesspoons oil in a large, heavy based pan, add 600-800g weight in potatoes, 4 crushed cloves of garlic and a sprinkle of flakey salt. Turn temp down to low, cover and cook, shaking occasionally, for about 40 mins or until the potatoes are cooked(time would depend on their size).
If mine come to anything I'll probably go for that option or baking and adding something to the inside when they are opened, like garlic butter, or cream cheese and gerkins.
It will be interesting to hear back from others as to how their crop goes, and what happened in the kitchen. |

Sounds good, Swallowstitch!
One question, are the purple potatoes purple on the outside only, or are they purple all the way thru - beetroot style?
I'm a little scared of beetroot, its the vegetable equivalent of liver after all... |

Hi Rebeka
As an ex-Geraldinite, I know how stoney the ground is around Orari - it must be hard work for you to keep the moisture up for your garden! But what a great area to live!
I am moving further south - to Clinton- shortly,brrr!But at least it's in the country again - there's nothing like country living! |
